Doesn’t-Taste-Like-Leftover-Cranberry Bars

INGREDIENTS:

  • 2 1/2 cups of all-purpose flour
  • 3/4 cup of confectioners’ sugar
  • 1 cup of butter (2 sticks), softened
  • 4 eggs
  • 1 1/2 cup of granulated sugar
  • 1/4 Tsp of salt
  • 3 cups of cranberries, chopped

INSTRUCTIONS:

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine 2 cups of flour, confectioners’ sugar, and butter. Mix until fully combined (you might have to use your hands).
  3. Press mixture into bottom of a 10×15-inch jelly roll pan.
  4. Bake for 15 minutes.
  5. Meanwhile, in a large bowl, combine the eggs, granulated sugar, salt, and remaining 1/2 cup of flour; mix until smooth.
  6. Fold in chopped cranberries.
  7. Spread mixture over hot crust and bake for 32-35 minutes, or until top is lightly golden. Let cool and cut into bars.
