
INGREDIENTS:
- 2 1/2 cups of all-purpose flour
- 3/4 cup of confectioners’ sugar
- 1 cup of butter (2 sticks), softened
- 4 eggs
- 1 1/2 cup of granulated sugar
- 1/4 Tsp of salt
- 3 cups of cranberries, chopped
INSTRUCTIONS:
- Preheat oven to 350 degrees F.
- In a large bowl, combine 2 cups of flour, confectioners’ sugar, and butter. Mix until fully combined (you might have to use your hands).
- Press mixture into bottom of a 10×15-inch jelly roll pan.
- Bake for 15 minutes.
- Meanwhile, in a large bowl, combine the eggs, granulated sugar, salt, and remaining 1/2 cup of flour; mix until smooth.
- Fold in chopped cranberries.
- Spread mixture over hot crust and bake for 32-35 minutes, or until top is lightly golden. Let cool and cut into bars.
